Our Favourite Homemade Pickle Recipe
We’re currently running a competition to win some of our delicious Yorkshire pork pies – to enter, all you have to do is tell us what you love to eat your pork pies with! A lot of entries have mentioned pickle – a classic pork pie accompaniment that (you may argue!) can’t be beaten!
We thought we’d put together our favourite pickle recipe so you can make your own at home, and after much debate in the office a sweet cucumber pickle came out ahead. Without further ado then, here is our top pickle recipe to enjoy with your pork pies this summer!
Sweet Cucumber Pickle
You Will Need:
– 1 cucumber
– 1/2 red pepper
– 1 red onion
– 250ml distilled malt vinegar
– 50g salt
– 200g soft brown sugar
– a couple of whole cloves
– a generous pinch of turmeric
– a cinnamon stick
Slice the cucumber, onion and pepper, layer in a bowl sprinkled with salt, add some cold water, and leave for a couple of hours. Drain the veg well and squeeze in a tea towel or some kitchen roll to draw out as much water as possible.
Meanwhile, bring the vinegar to a boil and add the cloves, turmeric, cinammon and sugar. Add the cucumber, onion and pepper, and boil for a couple of minutes. Transfer the veg to some sterilised jars, brim with the cooking liquid, and seal!
Voila! This makes enough pickle for approximately 1 large jar, but you can increase the quantities to make even more! Why not experiment by adding your own spices? Mustard is a great addition, and for an extra fresh taste you can even add some celery!
