When pancake day comes around, every year the main question on our lips is always ‘what toppings do you get?’ Whilst admittedly, we usually default back to good old lemon and sugar, this year, we’re wanting to get out of our comfort zone a little bit. This might end in more of a chocolatey mess than anything else and a promise that next year we’ll stick to our roots- but who knows, maybe this will be the year we start a new tradition!
Vale of Mowbray’s top 5 pancake toppings to try:
1. Banana and chocolate chip
This one’s got my name on it this year- what could be a better combination! Just before the pancake’s ready, throw in some chocolate chips and allow them to melt, delicious!
2. Rosa Park’s Peanut Butter Pancakes
If you’re a history nut, you may know that amongst Rosa Park’s personal papers, a peanut butter pancake recipe was found. So if you’re partial to a peanut butter flavouring, try it within the pancake for added texture and flavour, or perhaps just as a topping if you’re not wanting to fully commit!
3. Ice cream
Pick your favourite flavour for a sweet twist to your pancake- here’s the fun part- accessorise your ice-cream for ultimate indulgence. My pick would definitely be some caramel or butterscotch sauce, perhaps with some chocolate chips- my mouth is watering already!
4. Caramelised bacon
There’s bacon pancakes, which are good- but why settle for good when you can make great pancakes! Sweeten the bacon by caramelising the strips! Mix brown sugar and cinnamon in a bowl, coat the bacon slices in the mixture and arrange on a baking sheet. Bake for 8 minutes- turning once- until they’re a dark golden brown. The perfect mix of sweet and savoury!
5. Smoked salmon rolls
Go with us on this one; for a posh twist on a classic pancake, roll smoked salmon and crème fraîche as you would a sushi roll and cut into slices. But what dip? Try a vinaigrette, mustard mayo or horseradish sauce to really compliment the flavours.
